Sophia and Pedro Cook | Super-Sleuths Chili, a Middle-Grade Detective Recipe

As you know, Sophia and Pedro like to cook. Here is one of their "No Bunnies, Moo-Cows, or Chicks" recipes.

  • 1 tbsp. olive oil

  • 1 yellow onion, chopped

  • 4 garlic cloves, chopped

  • 1 poblano pepper, chopped

  • 2 bell peppers of any color, chopped

  • 1 lb. vegan crumbles

  • 2 tbsp. Mrs. Dash Chipotle Seasoning

  • 1 tbsp. ground cumin

  • 1 bunch of fresh cilantro chopped

  • 2 tsp. dried coriander

  • 3 15-oz. cans of fire-roasted diced tomatoes

  • 3 15-oz. cans of pinto or black beans, drained and rinsed

  • 2 cups of fire-roasted frozen corn

  • 1 quart of veggie broth

  • 1 small can of tomato paste

  • Salt and black pepper to taste

Put the oil in the bottom of a large kettle and sauté the onion and garlic. Add all the other ingredients to the pot except the last last two. Simmer on low heat for an hour, stirring occasionally. Add the last two towards the end of the cooking and stir well.

This can be served with tortilla chips, cornbread, or rice.
